"Fusion" was a term used by many to describe food that encompass ingredients and techniques that are derived from various cuisines. Fusion restaurants I've tried tend to form its base on French Cuisine but incorporate ingredients and flavors from other regions particularly from Asia.
However I found my first Chinese Fusion Restaurant in Ningbo where the dishes are Chinese but uses ingredients from other countries. I don't know the name of this restaurant except for the fact that it is located next to a KTV Club behind the Crowne Plaza Hotel.
Like many upscale Chinese Restaurants in Ningbo the menu here is gigantic and has a ton of different Chinese Dishes from various Chinese regions and also unique dishes that I have not seen.
Chilled Local Goose Liver with Japanese Pickled Ginger
I was surprised to find out that China actually produces their own Goose Liver and was even more surprised at the taste. It did not have a gamey flavor and melts in your mouth.
Deep Fried Eel
This was really good! The eel was very crispy and had a nice curry flavor to it. It tasted like Kentucky but with Curry Powder.
Deep Fried Prawns with Shredded Potato
The prawns were fried in a minced crab meat batter and was topped with some Mayonnaise and Fried Shredded Potatoes. What I liked most was the contrast in crispy textures from the heavy prawn batter and the light shredded potatoes
Bacon with Tomato Sauce
The bacon was actually good. Since it was not deep fried the bacon carried a texture similar to that of Pork Neck. The smoky flavor and bacon fat definitely went wellwith the mushrooms and tomato sauce
Tofu with Imitation Crab Meat and Crab Roe
This seems like a Shanghainese Dish. The tofu was super soft and the crab roe gave the overall gravy a rich and creamy flavor. The only thing I wished for was real crab meat
Szechuan Style Prawns
This was my least favorite of everything we had tonight. The prawns were fresh but was overpowered by the spiciness of the Szechuan Peppercorns
Stir-Fried Vegetables
Simple dish. The vegetables wasn't oily and had a a little crunch
Braised Fish in Superior Chicken Stock
Easily the best dish of this trip. The chicken soup was amazing! It had a lot of chicken flavor and was thick and creamy and has a little kick from the white pepper. It went so well with the fish which wasn't overcooked. I'm just amazed at how they achieved such creaminess without the use of cream.
I really enjoyed the food we had tonight especially the dishes that incorporated some foreign flavors and ingredients. I highly recommend the Braised Fish in Superior Chicken Stock. This is definitely the best Chicken Soup I've had and can't wait to have it again when I'm back in Ningbo!

i found out that actually most of our foie gras coming into msia may actually come from china, bcos its much cheaper!
Are you serious!? Well the one's I tasted in China were pretty good... They should harvest caviar there too lol
